José arrived in London twenty years ago, armed with a keen attitude and not a word of English. Four cookbooks and three beloved restaurants later, José is lauded as the godfather of Spanish cooking in London. In true Spanish style, José is so passionate about food,  ingredients and creating a welcoming space for diners in his ‘homes’, as he affectionately refers to his restaurants.

In this interview we talk a lot about Spanish food, what it’s like opening and running restaurants and what he'll be cooking up for Christmas in Spain...
